With tonkotsu broth, bones are cooked over a long period of time. Not only does all the dissolving and gelatin creation take place, you also end up breaking down fat, marrow, calcium and proteins.
So how long does this process take? We simmered ours up to 12 hours at a low boil. That is when the umami flavours comes out and the broth thickened to pretty much its maximum.
